  2. Use Scalfani hand picked San Marzano tomatoes with NO CITRIC ACID. The no citric acid is the key. There will be NO acidic sour taste to your sauce irregardless of what recipe you use. And thus you will not need to add sugar (yuk) to cover up the acidic taste from canned tomatoes. Again, no citric acid.
